I also made my favorite protein pancakes for brunch today. I've tried tons of protein pancake recipes and these are the only ones that I like and resemble "real" 'cakes. I got the recipe from an Eat This/Not That newsletter I received about 6 months ago. The recipe calls for 4 servings but I got 6 out of it; if you don't make gargantuan pancakes like I did, you could probably even get 8-10 of these puppies out of 1 batch:

Protein Pancakes
From Eat This/Not That
~2c frozen blueberries
~1/2 c water
~1/4c sugar
~1c FF cottage cheese (I use no sodium added)
~1c FF Greek yogurt
~1c whole wheat flour
~3 eggs
~juice of 1 lemon
~1/2 tsp baking soda
~pinch of salt
1) Heat the blueberries, water, and sugar in a saucepan over low heat, stirring often (about 10 min or until hot)
2) Combine all wet ingredients and dry ingredients separately. Blend the wet together and gradually add dry.
3) Griddle
4) Spoon blueberry mixture on top of pancakes. I like to spoon the juice on too instead of using syrup.
These are super filling and pretty dense. They are somewhat fluffy but nothing like regular pancakes; you'll be full for hours but not in that pancake-coma kinda way that a batch of Bisquick will give you ;) Also, NO TRANS FATS!! Yay!
